This one pan dish is so delicious and easy to make I’m almost embarrassed to tell you.  Almost.

Except that’s why I am here.  To tell you cooking fresh doesn’t have to be crazy labor intensive.  Now, I don’t cook much meat but my kids love their chicken and they love this dish. I’ve made it for awhile now, mixing my own seasonings together but this is the first time I’ve used my secret quick ingredient: Cappy’s Dry Rub Seasoning.

I found Cappy’s at a local farmers market but they also have an online store and I highly suggest you give it a try.  I love their all natural products so much I interviewed them for this blog.  You can see the article here.

So the farmers market gave me my seasoning, some great soft skin potatoes, rosemary and onions, all organic and from local farmers. (I’m happy already and I haven’t even cooked yet!) Of course organic, hormone free chicken is the way to go.  Supporting your local butcher is ideal but most stores carry organic meat now making it a great choice for your family.

I use dark meat for the skillet baked chicken because it is so moist but breasts would work just as well.  And when you bake it with Cappy’s, the skin gets so nice and crispy. Yum!  You could actually season the whole thing with Cappy’s as I’m sure the potatoes would taste amazing with this seasoning, but I like that hearty fall taste of rosemary with the potatoes and onions.  This is a great go-to cold weather dish.

Baked Skillet Chicken


Prep Time: 15 minutes

Cook Time: 1 hour

Total Time: 1 hour, 15 minutes

Serving Size: 4 Persons

Baked Skillet Chicken

Use organic, farm fresh ingredients whenever possible.


  • 4 soft skin potatoes of your choice (red, yellow, Yukon, fingerlings...) sliced into 1/4 in rounds
  • 1/2 white or yellow onion, thinly sliced
  • 1/4 cup water
  • 2 rosemary sprigs
  • salt and pepper
  • 1 Tbs EVOO
  • 2-3 Tbs Cappy's Dry Rub seasoning, original seasoning
  • 6 pieces of chicken, skin on (I use drumsticks and thighs)


  1. Heat oven to 425°
  2. Cover chicken all over with Cappy's Dry Rub and set aside.
  3. Place sliced onions in bottom of cast iron/ oven proof skillet.
  4. Add water.
  5. Add sliced potatoes and drizzle with EVOO.
  6. Sprinkle potatoes with rosemary leaves, salt and pepper.
  7. Add seasoned chicken skin side up and bake on bottom rack for approx. one hour.
