Although we still have some warm days ahead, there is definitely a shift in the weather. Cooler nights, sweaters, comfort food… these always seem to go together. I don’t know about you but I start getting away from the light salads I’ve been making all summer, and dig through my recipes for something a bit heartier, warm, and well, comforting. Like this Oven Baked Chicken with Rustic Croutons.
This past weekend, I grabbed some beets and kale from Underwood Family Farms with this recipe in mind. This super healthy and delicious one-pan dish would be perfect for a light lunch or dinner. I used salmon for this recipe, but you could easily substitute your favorite fish.
My daughter is a fairly picky eater but she does love PF Changs Chicken Lettuce Wraps. My husband is vegetarian so I easily substitute the chicken for mushrooms and make a vegetarian lettuce wrap for him that feels meaty. I make the chicken pieces a bit bigger then the restaurant version, but that’s the joy of making your own take of this popular dish.
A great new sauce was the inspiration behind these roasted lamb chops.
