Veggie Pita and Eco-Friendly Lunchbox Ideas

vegetable pita Yep, it’s that time again… school lunches!  What the heck to come up with for the next 9 months? Although my daughter could easily eat peanut butter and jelly everyday, I do prefer to give her a bit more variety then that.  And please don’t tell me you still use paper bags and plastic baggies that fill up the trash cans/landfills day in and day out?  (Do you feel a lecture coming on?)

Happy National Grilled Cheese Day!  I love my ultimate comfort food… grilled cheese sandwiches! When I was little, it was always white bread and American cheese and it reminds me of my mom and grandma.  At some point, my mom read something about wheat bread being good for us so we shifted to the whitest wheat bread she could find. (Home Pride anyone?)

Classic Egg Salad {Feed South Africa = Lunchbox Fund}

My elementary school lunches often consisted of the same thing because I was such a picky eater.  A hard boiled egg and a packet of salt {with 10 cents thrown in so I could buy a carton of milk}.  I must have eaten those things day in and day out and my wonderful mother kept packing them.  Because eating that one protein rich egg was better then me eating nothing at all. I think we all know at this point how lack of food can diminish willpower and concentration, and strip away a child’s potential. And poverty is often at the root of this issue.
