Hatch chile season is super short (Aug-Sept) which makes obtaining them half the fun! The soil and growing conditions in Hatch, New Mexico, create a unique flavor in the chiles grown there. In 2012, a law was passed that only chiles grown in this New Mexican valley can be labeled ‘Hatch’- which protects the local farmers and economy. These Hatch chiles are from Gillis Farms.

Candied Jalapeños

I feel like every time I go out back, there are more jalapeños popping up in my garden. They are going crazy right now and there are a ton of new buds forming as well. They have different heats at different stages and our favorite right now is when it’s transitioning from green to red.  That almost purplish-brown color is so flavorful, and packs a little kick.

Sautéed Shisito Peppers

Have you seen any of these Shisito Peppers at your local farmers market? Shisito Peppers are a mild  Japenese pepper but once in a while you may get a hot one in the bunch. These make a great summertime treat but they have a short growing session so grab some while you can.  Sautéed Shisito Peppers are easy to make and are a great snack, appetizer or side dish.
