Roasting Hatch Chiles

roasting hatch chiles

Hatch chile season is super short (Aug-Sept) which makes obtaining them half the fun! The soil and growing conditions in Hatch, New Mexico, create a unique flavor in the chiles grown there. In 2012, a law was passed that only chiles grown in this New Mexican valley can be labeled ‘Hatch’- which protects the local farmers and economy. These Hatch chiles are from Gillis Farms.

Veggie Pita and Eco-Friendly Lunchbox Ideas

vegetable pita Yep, it’s that time again… school lunches!  What the heck to come up with for the next 9 months? These make a great summertime treat but they have a short growing session so grab some while you can.  Sautéed Shisito Peppers are easy to make and are a great snack, appetizer or side dish.

Vegetarian Sloppy Joes

vegetarian sloppy joes

This Vegetarian Sloppy Joes is so quick and easy to make. It’s perfect when you don’t have a lot of time but still want a home cooked meal for the family. The key to getting great flavor in fewer steps is the salsa I used instead of a sloppy joe mix, or ketchup and added chopped ingredients. Use your favorite salsa, but my go to one for this dish is Naked Infusions Fire Roasted Garlic Salsa. This adds just the right kick of heat and garlic.  (Besides Naked Infusion Salsa tasting great, they are organic, non-GMO, vegan, and have no added sugar!)
