I love making whole fruit paletas.  A delicious summer treat using a puree of any whole fruit you have on hand.

After going to a cherry farm and picking 10 pounds of Bing and Rainer cherries, I had plenty on hand for these frozen treats. And they are perfect for July 4th BBQ’s.

For this recipe you’ll need 2 cups of fresh cherries, lemon juice, sugar, salt and some water.

After pitting your cherries, blend everything together.

Pour the puree into your molds and add wooden sticks.

Freeze until they become solid; over night or at least 4 hours. Dip the molds in hot water to help the paletas release from the molds.

Prep Time: 5 minutes

Cook Time: 4 hours

Serving Size: 6 3oz paletas

Ingredients

  • 2 cups fresh, pitted cherries
  • 1 Tbs sugar
  • 1/2 Tbs fresh lemon juice
  • 1/2 tsp salt
  • 1/4 water )or more if needed)

Instructions

  1. Puree all ingredients in a blender until smooth
  2. Add more water to get desired consistency
  3. Adjust sugar and lemon juice to taste
  4. Add puree to pop molds and add sticks
  5. Freeze for at least 4 hours or over night
  6. Run hot water over molds to release the paletas

      Oh man, they are sooooo good! It’s been over 100 degrees where I live so I made a big ole batch… but they don’t last long.
