Classic Egg Salad {Feed South Africa = Lunchbox Fund}

My elementary school lunches often consisted of the same thing because I was such a picky eater.  A hard boiled egg and a packet of salt {with 10 cents thrown in so I could buy a carton of milk}.  I must have eaten those things day in and day out and my wonderful mother kept packing them.  Because eating that one protein rich egg was better then me eating nothing at all. I think we all know at this point how lack of food can diminish willpower and concentration, and strip away a child’s potential. And poverty is often at the root of this issue.

Did you know that 65% of all South African children live in poverty? 65%!  And something as simple as receiving food encourages these children to stay in school and obtain their education. I wanted to help draw attention to this by dedicating my blog post to the Lunchbox Fund and their mission to buy and deliver food to South African school children in need. With two children of my own, it tugs at my heart strings to hear of the poverty so many of our children face everyday.

Although $100 would feed a child for an entire year, a $10 donation, or any donation given according to your means, would go a long way. Skipping a movie or a few lattes is a no brainer for me… how about you? Head on over and check out their fundraising page here.

Feed a Child Nourish a Mind

My kids are always fortunate enough to have full bellies… but the aren’t as in love with hard boiled eggs as I am. My daughter does love my egg salad though and even helps with the chopping. {Thank goodness for chopping gadgets. I make it much more often since I discovered one of these.}  The eggs and celery were both from the Rodriguez Farms in Watsonville.

Feed South Africa = Lunchbox Fund and Classic Egg Salad

Prep Time: 15 minutes

Serving Size: serves 6

Feed South Africa = Lunchbox Fund and Classic Egg Salad

If you like more of a spicy flavor, adjust the hot sauce to your hearts content.


  • 1 dozen hard boiled eggs, peeled
  • 3/4 cup mayonnaise
  • 1/3 cup chopped celery (about 1 large stalk)
  • 1/2 tsp mustard
  • 2 dashes of your favorite hot sauce
  • salt and pepper


  1. Coarsely chop the hard boiled eggs.
  2. Add chopped celery and combine.
  3. In a small bowl, mix the mayo, mustard, hot sauce, and salt and pepper to taste.
  4. Stir gently to combine.
  5. Adjust seasonings to taste.
