Crisp Garlic Green Beans

Anything with crispy garlic in it has to be good, right?

I found these super fresh green beans from Grove Garden Farms at the Farmers Market last weekend and knew this would be an easy side dish for tonight’s dinner.  So affordable and freshly picked, I could have snacked on them right then and there. But then I remembered my starving family and brought them home.  So starving in fact that I only got to take one photo before they were divvied up at the dinner table.  Sorry blog world, you’ll have to make your own and share your photos with me.

Crisp Garlic Green Beans

Prep Time: 12 minutes

Cook Time: 8 minutes

Serving Size: 4-5 servings

Crisp Garlic Green Beans

I use Pink Himalayan Sea Salt whenever possible.

Ingredients

  • 3 Tbs grape seed oil (or EVOO)
  • 4 large garlic cloves
  • 1 lb green beans, trimmed and cut
  • 1/2 cup water
  • 1 tsp salt
  • 2 Tbs rice vinegar
  • 1/2 Tbs grated ginger
  • 1 Tbs sesame seeds
  • 1/2 tsp sesame oil

Instructions

  1. Thinly slice garlic cloves
  2. Heat oil in a small skillet and sauté garlic, until golden.
  3. Remove garlic to a paper-towel to absorb extra oil.
  4. Reserve 2 Tbs of the oil and pour into a large skillet and place on a medium heat.
  5. Add beans, water and 1/2 tsp of the salt.
  6. Bring to a boil and cook 5-7 minutes until liquid evaporates and beans are tender-crisp.
  7. Add rice vinegar and ginger; cook 1 minute more.
  8. Stir in sesame seeds, sesame oil and remaining 1/2 tsp of salt.
  9. Transfer to a serving platter and garnish with garlic.
