April 22 will mark the global celebration of Earth Day, started in 1970 by US Senator Gaylord Nelson after observing the devastation of the 1969 Santa Barbara oil spill. Growing up on the west coast just south of Santa Barbara, I can recall how ‘normal’ it was to come home after a day on the beach and clean the tar off my feet.
After 37 years, Earth Day is now the largest secular observance in the world, celebrated by more then a billion people! Often it is the time of policy change and a day of community action. (With cuts to the EPA, the importance of Earth Day is more relevant then ever!)
I don’t know about you but I like to celebrate just about anything with food! And I have such a weakness for salty snacks, don’t you? But I try to stay healthy, so finding the right brand is important. On top of that, I’m also starting to cut down on gluten.
