I’ve been hearing a lot about Ketogenic diets for a while now, but I never really dove in to see what all the fuss was about. Friends have lost weight and said how good they feel eating Keto, so I was intrigued when this new book came my way: The Ketogenic Mediterranean Diet: A Low-Carb Approach to the Fresh-and-Delicious, Heart-Smart Lifestyle

The book, by Robert Santos-Prowse, is part nutritional/metabolic lesson, Keto crash course, and recipe book.  It’s really perfect for anyone that wants to learn more since it’s like three books in one.  I really like the section that lays it all out… what can I eat, what I can’t eat.  Of course it goes into more detail for each of those sections, but it’s a handy little guide to peek at as you learn the Keto lifestyle. And, if you really need to get additional meal ideas, there is a meal plan toward the back of the book!

The Tofu Scramble recipe was a good start for my family to try (as we are mostly vegetarian), so it’s nice to know what Keto options there are for us. (It’s not as full of the healthy fats as some of the other recipes, but just add a few slices of avocado and that would do the trick nicely!) My hubby loved it and asked for the recipe so he can make it if I’m not home.

The ingredients are clean and simple.  All the herbs came from my garden and, if you’ve been reading my blog for a while, you know I’m going to preach to you about how easy it is to grow your own herbs! Can I get an amen?

A little secret to crisping up tofu is to get out as much moisture as possible. Wrap it in paper towels and put something heavy on top – a cast iron skillet perhaps or, in my case, sharpening stones.

Meanwhile, julienne and chop your herbs, garlic, and scallion and mix together the seasonings and water.

After the tofu has been drained of moisture, cut it into half inch cubes.

Add the tofu to a skillet with heated oil and cook until lightly browned. Add the seasoning slurry and nutritional yeast and stir together. Take off heat and add in the garlic, scallion, and herbs – cooking with residual heat for one minute.

Besides the time needed to drain the tofu, this was a super quick recipe that I think could be served at any time of day. This Keto Tofu Scramble dish is also a Vegan Tofu Scramble!

Keto Tofu Scramble

Print Recipe
Serves: 2 Cooking Time: 10 minutes

Ingredients

  • 1 package extra firm tofu, drained
  • 2 Tbs olive oil
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika (or regular, if that's all you have)
  • 1/2 tsp course salt
  • 1 tsp ground black pepper
  • 2 cloves garlic, chopped
  • 2 Tbs water (I used four)
  • 2 Tbs nutritional yeast
  • 1 Tbs fresh sage, julienned
  • 2 Tbs fresh basil, julienned
  • 1 Tbs fresh rosemary, finely chopped
  • 1 scallion, diced
  • 1 avocado, sliced (optional)

Instructions

To drain the tofu, wrap it in paper towels and place a heavy weight on it, replacing the towels when necessary

While draining tofu, julienne the sage and basil, and chop the rosemary, garlic, and scallion

In a small bowl, combine the turmeric, cumin, paprika, salt, pepper, and water; mix and set aside

When the tofu is drained, cut into half inch cubes

Heat the oil in a skillet over medium heat

Add the tofu and sauté, stirring frequently until all sides are lightly browned

Add the spice slurry and stir to coat

Add in the nutritional yeast

Cook until sauce achieves a sticky consistency (add more water at this stage if necessary)

Remove the pan from heat and add in the sage, basil, rosemary, garlic, and scallion; stir

Allow to cook with residual heat of the pan for one minute

Notes

Use organic, locally sourced ingredients whenever possible
