Open Face Egg Sandwich

I’m a big fan of breakfast anytime of day. And this Open Face Egg Sandwich, with some protein and greens, fits the bill.  And oh!  What a great thing to make with leftover ham the day after a holiday feast!

I love having our fresh eggs every day from our hens.  There’s really nothing like it. But there are times when I need more then our girls can deliver. (Baking frenzy, anyone?) Well, my search for the best store bought eggs has officially ended. This is definitely a brand I love; one that supports family farms and that I want to share with you guys. Pete & Gerry’s Organic Eggs: the first egg brand in the country to be Certified Humane, as well as being organic, and free of GMO’s, pesticides, hormones, and antibiotics. Perfection (…short of having your own hens… I need more hens…) and even more perfect is they offered some coupons for free eggs to one of you fabulous readers. Gotta share that gorgeous vibrant yellow yolky love!

This sandwich is super easy to throw together.  If you wake up with a house full of guests, pulling this together for everyone will take no time. You’ll want to whip up a little dressing for the baby greens (Kenter Canyon Farms) to add a creaminess to the sandwich.

Slice the tomatoes into slightly chunky pieces so they don’t fall apart when you cook them…

Cook ham until golden brown and set aside…

Cook the tomatoes until golden brown…

Cut the bread and half lengthwise.  Grill on skillet pan until lightly golden brown…

Fry your eggs…

Before adding the dressing to the greens, give them a chop to make more bite size, if needed…

…and put your sandwiches together…

Open Face Egg Sandwich

Print Recipe
Serves: 4 Cooking Time: 10


  • 1 Tbs white wine vinegar
  • 2 tsp mayonnaise
  • 1 tsp mustard
  • 4 Tbs olive oil (divided)
  • 1/4 tsp pepper
  • 2 slices ham
  • 4 small tomatoes, cut into 1/4-inch thick pieces
  • 4 eggs
  • 1-2 french baguettes (depending on how big you want your bread slices)
  • 2 cups baby greens



Whisk together the vinegar, mayo, mustard, 2 Tbs oil and pepper until emulsified. Set aside


In a cast iron skillet, heat 1 Tbs oil over med-high heat. Cook ham until golden brown. Remove and place on paper towel. Slice in half, lengthwise


Using the same pan and oil, cook the tomatoes until golden brown


Heat a grill pan over med-high heat. Grill the bread cut side down until lightly golden brown. Flip over and grill for 20 seconds more. Transfer to plates


While the bread is toasting, add the remaining 1 Tbs olive oil in the cleaned out skillet. Crack the eggs into the pan and season with pepper. Cook until the whites are firm. (At this point, you can flip over if you prefer)


Add dressing to greens and toss to coat


To serve, add a halved slice of ham to the bread. Top with a few tomato slices, baby greens and an egg. Serve immediately
