Peach Apricot Smoothie

Summer fruit is brimming over at the markets and this girl couldn’t be happier.  I have to admit I was (pleasantly) surprised to see so many peaches and apricots all of a sudden but, duh,it is June!  Bring on the stone fruits!  Yummmmmm.

In my excitement for all this juiciness, I way over bought and decided to slice up my extra peaches and apricots and freeze them. (I do this with bananas too, by the way, if I see them starting to brown and I don’t want to make banana bread.)

This recipe utilizes the frozen fruit but I do fresh fruit all the time and add a few ice cubes to give it that smoothie texture. I also used almond milk but you can substitute for rice or soy.  Vegan peach apricot smoothie! Yum!

Peach Apricot Smoothie

approx 24 oz

Peach Apricot Smoothie

Use organic fruits whenever possible.


  • 2 peaches, sliced
  • 2-3 apricots, sliced
  • 1 banana, sliced
  • 1 1/2 cups unsweetened almond milk (I used vanilla for another layer of flavor)


  1. Add all ingredients to your blender and process until smooth. If your fruit was not pre-frozen, you can add ice cubes to chill it a bit and add a thicker consistency.
