Summer fruit is brimming over at the markets and this girl couldn’t be happier. I have to admit I was (pleasantly) surprised to see so many peaches and apricots all of a sudden but, duh,it is June! Bring on the stone fruits! Yummmmmm.
In my excitement for all this juiciness, I way over bought and decided to slice up my extra peaches and apricots and freeze them. (I do this with bananas too, by the way, if I see them starting to brown and I don’t want to make banana bread.)
This recipe utilizes the frozen fruit but I do fresh fruit all the time and add a few ice cubes to give it that smoothie texture. I also used almond milk but you can substitute for rice or soy. Vegan peach apricot smoothie! Yum!
