Portobello Mushrooms with Kale

What to do with those gorgeous Portobello Mushrooms at the farmers market?  Here is the perfect, cold weather fix. Roasted Portobello Mushrooms with Kale. Hearty as a main dish or just have one as a side. You’ll want to marinate the portobellos for at least half an hour but you could also do them overnight to save you some time.

Portobello Mushrooms with Kale

Prep Time: 30 minutes

Cook Time: 40 minutes

Serving Size: serves 2

Portobello Mushrooms with Kale

Ingredients

  • 1/4 cup apple cider vinegar
  • 1 Tbsp honey
  • 2 chopped garlic cloves
  • 2 thinly sliced garlic cloves
  • 2 Tbsp EVOO
  • course salt
  • freshly ground pepper
  • 4 stemmed portobello mushrooms
  • 1/4 thinly sliced red onion
  • pinch of red pepper flakes
  • 6 cups thinly sliced kale

Instructions

  1. Heat oven to 400°
  2. Combine the apple cider vinegar, honey, chopped garlic and EVOO in a bowl.
  3. Season with salt and pepper.
  4. Arrange portobellos in a baking dish and drizzle with vinaigrette.
  5. Marinate at room temperature, turning occasionally for at least 30 minutes (or overnight in the fridge).
  6. Heat 1 Tbsp oil in a large skillet over medium heat.
  7. Add red onions, sliced garlic and red pepper and cook, stirring until softened, about 5 minutes.
  8. Add kale, season with salt and cook uncovered until bright green and soft, about 4 minutes.
  9. Roast mushrooms, flipping once, until tender, about 25 minutes. Serve topped with kale.

    I am so impressed with your blogging skills, Photos are beautiful (we know thats what you do)
    the foodie that I am and not just a foodie but one that is in constant pursuit of organics and creative ways of putting food together. Preparing meals for a family can either turn a gal off or cause her to draw from deep within her creative reservoir.
