Roasted Artichoke Heart Salad

I’m still loving my Hatch Chiles while they are fresh.  I can do roasted any time since I froze a bunch after roasting them up, but there are some great recipes that fresh Hatch Chiles are perfect for…. like this Roasted Artichoke Heart Salad with Hatch Chiles and Edamame.

Roasted artichoke hearts are so good.  I had to be careful not to eat them all off the pan.  I suggest using artichoke hearts that have been marinating in olive oil for delicious and easy roasting.  Just pop them in the oven for about 13 minutes. (Before and after, below.)

The edamame need to be shelled if they aren’t already and you’ll also need Hatch Chiles, lemons. limes and shallots.

The Hatch Chiles are from Gillis Farms in Hatch, New Mexico. I sliced them super thin on my mandolin, stopping short of the top of the chile so as to not bother with the seeds. (I’ll use these tops for another recipe.)

The shallots were minced and added to the lemon/lime vinaigrette mixture I made.

Toss it all together, adding the vinaigrette when ready to serve.  This salad can be served cold but I also like it when the artichoke hearts are still warm for an extra layer of texture and flavor.

Roasted Artichoke Heart Salad

Prep Time: 25 minutes

Serving Size: 2-3 as a meal, 6-8 as a side

Roasted Artichoke Heart Salad

Ingredients

  • 1 33oz jar marinated artichoke hearts, drained
  • 3 fresh Hatch Chiles, thinly sliced (discard seeds and stem)
  • 5 oz shelled Edamame
  • 1/8 cup minced shallots
  • 1/8 cup freshly squeezed lemon juice
  • 1/8 cup freshly squeezed lime juice
  • 1/8 cup EVOO
  • 1/2 Tbs sugar, plus more if needed
  • salt and freshly ground pepper to taste

Instructions

  1. Preheat the oven to 425°
  2. Place the artichoke hearts in a single layer on a baking sheet and roast for 12- 14 minutes.
  3. In a small bowl, whisk together the lemon and lime juice, olive oil, shallots, sugar and salt and pepper.
  4. If the dressing is too tart, add more sugar to taste.
  5. In another bowl, combine the artichoke hearts, Hatch Chiles and Edamame.
  6. Add dressing before serving.
  7. You can also chill the salad and serve cold.

    Love artichokes, even the canned ones, but never thought of roast them. Brilliant idea, Karen. Gotta try some hatch chilies too. Great post!

    I feel guilty buying them in a jar but I have to tell you, if you get the ones that have been marinating in olive oil (preferably with garlic and spices too), they roast up so easily and are so delicious, you will eat them off the baking pan and they’ll never make it to the salad! lol The hatch chiles give it a nice bit and the creamy edamame rounds out the flavors really well.     One of my husband and I’s favorite things to do is to sit down with a couple of Artichokes and eat them with all the pleasure they deserve. They are one of our favorite things to eat. I love the recipes with adding chili. I didn’t realize you could do so much with an artichoke beside steam them. I would really love to win this book because I am a chili and artichoke lover and I would put it to good use.
