I think there are two types of people; soft cookie people and crispy cookie people. With a few exceptions, I’m definitely a soft cookie person.
My daughter wanted to make some cookies for the holidays and requested my soft sugar cookies so she could decorate them. Aren’t these cute?
Warning: these are not low calorie! They are sugar cookies! However, the shortening I use for these is by Spectrum, an organic palm oil that is non-hydrogenated.
This vanilla is my favorite! This bottle is straight from Mexico (and obviously well used and loved) but you can get La Vencedora Mexican Vanilla here too. Are there any local vanilla vendors out there? I’d love to try your product.
These cookies are a bit bigger then normal, so once you have your dough ready, roll out balls slightly larger then a golf ball, then press fairly flat. The cookies will spread a bit so make sure to leave room. These went from 3 1/2″ to 4 1/4″ after baking.
If your cookies split a bit at the edges when you press them flat, just run your fingers over the edges to smooth out. And of course make sure to taste them to make sure you don’t poison anyone. Sometimes you need to try two…
