This past weekend, I grabbed some beets and kale from Underwood Family Farms with this recipe in mind. This super healthy and delicious one-pan dish would be perfect for a light lunch or dinner. I used salmon for this recipe, but you could easily substitute your favorite fish.

Chop up your kale and dice your roasted beet…

Throw them in a pan and drizzle with olive oil, season and toss…

Whisk the oil and mustard…

Season the salmon with salt and pepper and place ontop of the kale and beets. Spoon the dressing over the fish…

Twenty minutes later you’re gobbling it all up!

Salmon with Kale and Beet Salad

Prep Time: 10 minutes

Cook Time: 20 minutes

Serving Size: 1 serving

Ingredients

  • 2 cups kale
  • 1 small beet
  • 1 tsp EVOO, plus more for drizzling
  • salt and ground pepper
  • 1 tsp Dijon mustard
  • 1 5-oz salmon filet, no skin

Instructions

  1. Heat oven to 400°.
  2. Wrap the beet in foil and roast until tender, about 1 hour; peel and dice
  3. Place kale and beets in a small baking dish
  4. Drizzle with EVOO and season with salt and pepper, toss
  5. Is a small bowl, whisk EVOO and mustard
  6. Season fish with salt and pepper and put on top of the kale and beets
  7. Brush dressing on top of the fish and cover with foil
  8. Bake until the greens are wilting and the beets are cooked through, about 20 minutes
