Veggie Pita and Eco-Friendly Lunchbox Ideas

vegetable pita Yep, it’s that time again… school lunches!  What the heck to come up with for the next 9 months? Although my daughter could easily eat peanut butter and jelly everyday, I do prefer to give her a bit more variety then that.  And please don’t tell me you still use paper bags and plastic baggies that fill up the trash cans/landfills day in and day out?  (Do you feel a lecture coming on?)

This hummus and veggie pita is fast and easy and of course you can add in other favs like avocado as well.  I love the creamy hummus with the crunch of the cucumber and ohhhh, wait, I need to tell you about this awesome feta cheese… it’s from Redwood Hill Farm and it’s Raw Goat Feta!  Unbelievably delicious.  (The recipe for the veggie pita is below.) vegetable pita

Veggie Pita

Prep Time: 10 minutes

Serving Size: 1

Veggie Pita


  • 1 pita (I use whole wheat)
  • 4 oz hummus
  • 6-8 slices of peeled cucumber
  • 4-6 slices of roma tomato
  • 1 lettuce leaf (spinach would be great too!)
  • 1/4 cup feta (I used raw goat feta - yum!)


  1. Chop lettuce into bite size pieces.
  2. Slice pita in half and gently open to create a pocket.
  3. Spread hummus over inside of pita halves.
  4. Fill with cucumber, tomato, cheese and lettuce to taste.
